Coconut blossom sugar is obtained from the nectar of the flower buds of the coconut palm. The farmers climb coconut palms to collect the nectar in containers. This is then heated in cauldrons over a fire until it granulates. Coconut blossom sugar is not only one of the most sustainable sugars, it also has a low glycemic index and a unique caramel taste.
