Basic Pad Thai Recipe Using COCK Brand Pad Thai Paste

Ingredients:

  • 100 grams rice noodles
  • 2 tablespoons vegetable oil
  • 50 grams COCK Brand Pad Thai Paste
  • 200 grams chicken breast or shrimp, thinly sliced (or tofu for a vegetarian option)
  • 2 eggs, lightly beaten
  • 100 grams bean sprouts
  • 50 grams firm tofu, diced (optional)
  • 1 small carrot, julienned
  • 2 spring onions, chopped
  • 30 grams roasted peanuts, chopped
  • 1 lime, cut into wedges
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Prepare the Noodles:
    • Soak the rice noodles in warm water for about 20-30 minutes, or until they are soft. Drain and set aside.
  2. Cook the Protein:
    • In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken or shrimp (or tofu) and cook until it is fully cooked. Remove from the wok and set aside.
  3. Cook the Pad Thai Paste:
    • In the same wok, add another tablespoon of vegetable oil. Add the COCK Brand Pad Thai Paste and cook for about 1-2 minutes, stirring frequently until fragrant.
  4. Add the Eggs:
    • Push the paste to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until they are just set, then mix them with the paste.
  5. Combine Noodles and Protein:
    • Add the soaked noodles to the wok and toss to coat with the paste and eggs. Return the cooked chicken or shrimp (or tofu) to the wok and mix well.
  6. Add Vegetables:
    • Stir in the bean sprouts, diced tofu (if using), julienned carrot, and chopped spring onions. Cook for another 2-3 minutes, until the vegetables are slightly tender but still crisp.
  7. Serve:
    • Transfer the Pad Thai to serving plates. Sprinkle with chopped roasted peanuts and garnish with fresh cilantro. Serve with lime wedges on the side for squeezing over the top.
