Igarashi Noodles, as described, is a Japanese noodle company with a rich history dating back to 1931. Founded by Taiji Igarashi, who initially separated from the main Igarashi family business, the company began as a store selling milled rice, beans, and soybeans. Familiarity with local ingredients like Kitakata's miso, soy sauce, and dashi led to the company's involvement in the noodle industry starting in 1949.

Igarashi Noodles specializes in producing high-quality ramen noodles. The noodles are crafted with water from Mt. Iide and select flour from the surrounding region. By aging and drying (not frying!) the noodles at low temperatures for 48 hours, Igarashi Noodles creates dried ramen that retains the texture and chewiness of fresh noodles.
