Basic Green Curry Recipe Using Thai Pride Green Curry Paste

  • 2 tablespoons Thai Pride Green Curry Paste
  • coconut milk to taste
  • 450 g chicken breast or thighs, sliced thinly (or tofu for a vegetarian option)
  • 1-2 cups mixed vegetables (e.g., bell peppers, zucchini, eggplant, green beans)
  • 1 cup Thai basil leaves
  • 1-2 kaffir lime leaves, torn (optional)
  • 1 tablespoon fish sauce (or soy sauce for a vegetarian option)
  • 1 teaspoon sugar
  • 1-2 Thai bird’s eye chilies, sliced (optional, for extra heat)
  • Cooked jasmine rice, for serving
  • Fresh lime wedges, for serving (optional)

  1. Prepare the Ingredients:

    • Gather all your ingredients and slice the chicken and vegetables.
  2. Cook the Curry Paste:

    • In a large pot or wok, heat a little oil over medium heat. Add the 2 tablespoons of Thai Pride Green Curry Paste and cook for about 2-3 minutes, stirring frequently until fragrant.
  3. Add the Coconut Milk:

    • Gradually add the coconut milk, stirring well to combine with the curry paste. Bring to a gentle simmer.
  4. Cook the Chicken:

    • Add the sliced chicken to the pot and cook for about 5 minutes, or until the chicken is just cooked through.
  5. Add the Vegetables:

    • Add the mixed vegetables to the pot. If using kaffir lime leaves, add them now. Simmer for another 5-10 minutes, or until the vegetables are tender.
  6. Add Seasonings and Basil:

    • Stir in the fish sauce, sugar, and sliced chilies (if using). Add the Thai basil leaves and cook for another 1-2 minutes, until the basil is wilted and the flavors are well combined.
  7. Serve:

    • Serve the green curry hot over cooked jasmine rice. Garnish with fresh lime wedges if desired.
