Red curry is a Thai curry known for its rich and spicy flavor profile. The deep red color of the curry comes from a paste made with red chilies, garlic, lemongrass, galangal, and other aromatic spices. Coconut milk is a common ingredient, lending a creamy texture to the dish. Red curry is often prepared with various proteins such as chicken, beef, or shrimp, and includes vegetables like bamboo shoots, bell peppers, and Thai basil. The heat level can vary, but red curry generally offers a robust and savory taste with a noticeable kick of spiciness. It is a popular and flavorful choice in Thai cuisine.


Serves 4 people:

  • 1 packet of Aromax Yellow Curry Paste
  • 160ml coconut milk
  • 180ml water
  • 200g pieces of meat (chicken, duck, lamb or beef)
  • Eggplants and cherry tomatoes
  • 2-3 tablespoons. Cooking oil.


  1. Heat the oil and add Aromax Red Curry Paste and heat over low heat (1 min.)
  2. Add the meat and stir fry.
  3. Add coconut milk, water, eggplants, cherry tomatoes and bring to the boil.
  4. Season to taste with fish sauce. Put some kaffir lime leaves, red chili or sweet basil, serve hot.
