  • coconut milk to taste
  • 450 g chicken breast or thighs, cut into bite-sized pieces (or tofu for a vegetarian option)
  • 2 medium potatoes, peeled and cubed
  • 1 large carrot, sliced
  • 1 small onion, chopped
  • 1 red bell pepper, sliced
  • 1 tablespoon fish sauce (or soy sauce for a vegetarian option)
  • 1 teaspoon sugar
  • 1 cup chicken broth or water
  • Fresh cilantro, chopped (for garnish)
  • Cooked jasmine rice (for serving)
