Miso paste is a staple Japanese cooking ingredient made by fermenting soy beans, and sometimes barley and/or rice, with koji (an edible fungus that grows on rice and is also known as 'rice malt' or 'rice mould'). If you are looking to explore the wonderful world of Japanese flavours miso is probably the best to start with.
Shinshu Miso follows the traditional method of miso production originated in the Shinshu Region of Japan. The miso has the distinguish golden yellow colour and smooth paste texture and features the refreshing aroma and light sweet flavour.
In whole spectrum of miso pastes this one is mild type that's fermented slightly longer than white miso. This yellow miso ranges from light yellow to light brown, and is adaptable to most cooking applications, from soups to glazes.
